Mmmmmm . . .Squash

I am not a foodie, nor am I a recipe blogger.  That being said, I very recently had to cut gluten out of my diet for health reasons, and am trying a LOT of new foods and recipes.  Tonight is squash, zucchini, mushrooms and tofu.  It doesn’t have a name, because I made it up.

What you need:

  • one medium yellow summer squash
  • one medium zucchini
  • a handful or 2 of fresh mushrooms chopped
  • 1/2 a block of plain tofu
  • olive oil
  • garlic powder
  • season sat
  • basil

Cut the zucchini and squash into thin disks, then cut in half.  put a minimal amount of olive oil in the pan, you aren’t frying the veggies.  (like a teaspoon or 2)

Put squash and zucchini in pan and set to medium heat.

Chop mushrooms and tofu and add to pan.  Season as desired, but lightly.  The veggies have natural flavor, don’t kill it.

Heat, stirring, for about 10 minutes.  Eat!

This will feed me all week for lunch!
