Really Delicious Chicken and Potatoes

I hadn’t planned on blogging recipes.  I’m no Rachel Ray!  But lately we’ve tried a lot of really good and pretty simple recipes that I just cannot keep to myself.  This first one we just had tonight and there isn’t a single left over, which is no easy feat in a house where one kid is OCD and needs all his food plain.  But this Zesty Chicken and Potato recipe was so freaking good, even Big A, the world’s pickiest eater, gave it 2 thumbs up!


What You Need

4 chicken breasts (1-1/2 lb.)
1-1/2lb. baking potatoes (about 3), cut into thin wedges
1/4cup  Zesty Italian Dressing
1/4cup  Grated Parmesan Cheese
1tsp. Italian seasoning

Make It

HEAT oven to 400°F.

PLACE chicken and potatoes in 13×9-inch baking dish.

TOP with dressing; sprinkle with cheese and seasoning. Cover.

BAKE 30 minutes covered, then 10 uncovered.

We ate our’s with corn, but I can think of any number of veggies that would be yum with this dish.  I actually have a family brunch coming up and 4 of the family members coming are vegitarian.  I plan to make just the potatoes as a side dish for the brunch.  Should be REALLY good!
